This is nice for a change, I use low carb bread instead of pitta for the croutons.

2 pitta breads

2 tbsp extra-virgin olive oil

50g walnuts roughly chopped

100 g feta crumbled

25 g mint roughly chopped

1 red onion finely chopped

3 tbsp pomegranate seeds

garlic powder

Italian herbs

For the dressing

2 tbsp balsamic vinegar

3 tbsp extra-virgin olive oil

0,5 tsp sea salt

0,5 tsp chilli flakes
