What are you going to fill the cracks with once the weeds are dead ?   I've got the same problem with paving stones, a lot of the cement has gone from between them.

You might consider filling them with earh/compost and sewing aromatic ground-cover plants like thyme or marjoram, maybe camomile so when it's walked on or driven over it releases it's fragrance. There are lots of 'em so perhaps sow a mix into the cracks, water lightly and Bob's prob'ly your auntie.

I found most weedkillers leave white stains on my block paving.

I had some black staining where olives had been pecked off and fallen and used bleach to get rid of that to save using the jet wash and noticed it also killed the weeds. Now I just spray neat bleach on the weeds and that kills them. Not super long lasting but it's a quick job and cheap. I buy the big 1.5 or 2l bottles from supermarkets.

Planting herbs between the paving slabs sound interesting .. Might give it a go..
Wait a minute... If herbs can grow.. so can weeds.. !!
Back to the same old problem..

If you want some plants to grow and others not then you need something that grows vigorously and so suppresses other plants. That means you just need to alter your definition of what is a weed...

That's why you sow the seeds. Intentionally.

Clear gaps first, then refill with paving sand, any weeds that grow can be pulled out by hand.
